- 2 tbsp olive oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- ½ cup red wine (optional)
- 1 tbsp tomato paste
- 1 tsp rosemary
- ½ tsp thyme
Instructions
- Season Lamb: Season the lamb chops generously with salt and pepper to enhance the natural flavors and prepare them for searing.
- Sear Lamb: Heat olive oil in a skillet over medium-high heat. Sear the lamb chops until browned on both sides to lock in juices and add depth to the flavor.
- Prepare Slow Cooker: Place the sliced onion, minced garlic, rosemary, and thyme into the bottom of the slow cooker, creating a flavorful base.
- Add Ingredients to Slow Cooker: Arrange seared lamb chops over the onion and garlic mixture. Pour in the beef broth, red wine (if using), and stir in the tomato paste to distribute flavor evenly.
- Slow Cook: Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours until the lamb is tender and easily pulls away from the bone.
- Serve: Serve the lamb chops hot with your choice of mashed potatoes or roasted vegetables, spooning some of the cooking juices over the top for extra richness.
Notes
- To thicken the cooking juices before serving, mix 1 tbsp cornstarch with 2 tbsp water and stir into the hot juice, cooking until thickened.
- If avoiding red wine, substitute beef broth with chicken broth or additional beef broth.
- For best results, sear lamb chops in batches if your skillet is not large enough to avoid steaming.
