Description
Slow Cooker Chuck Roast is a tender and flavorful meal made by slowly cooking a well-seasoned beef chuck roast with vegetables and broth. The long cooking time allows the meat to become incredibly soft and juicy, making it a perfect comforting dinner option that’s easy to prepare and packed with rich flavors.
Ingredients
Meat
- 3–4 lbs beef chuck roast
Vegetables
- 4 medium potatoes, peeled and cut into chunks
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
Liquids and Sauces
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
Seasonings and Oils
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- Heat the oil: Place a skillet over medium-high heat and add the olive oil, heating it until shimmering to prepare for searing the meat.
- Season the roast: Rub the chuck roast evenly with salt, black pepper, and paprika to enhance flavor.
- Sear the roast: Brown the seasoned chuck roast in the hot skillet, cooking for 2–3 minutes on each side until a deep golden crust forms, which locks in the juices.
- Prepare the slow cooker base: Arrange the peeled and cut potatoes, sliced carrots, chopped onion, and minced garlic at the bottom of the slow cooker, creating a flavorful vegetable bed.
- Add the roast: Place the seared chuck roast on top of the prepared vegetables in the slow cooker.
- Pour liquids: Slowly pour the beef broth and Worcestershire sauce over the roast and vegetables, ensuring even distribution to keep the dish moist and flavorful.
- Cook low and slow: Cover the slow cooker with its lid and set to cook on low for 8 hours or alternatively on high for 5 hours, allowing the meat to become tender and the flavors to meld together.
- Serve: Once cooked, slice or shred the tender roast and serve it alongside the cooked vegetables and natural juices from the slow cooker for a hearty meal.
Notes
- Add mushrooms or celery to the vegetables for extra depth of flavor and texture.
- Leftover roast can be shredded and used in sandwiches or tacos for delicious subsequent meals.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days to maintain freshness and safety.
