  • 2 lbs carrots, peeled & chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp ground ginger
  • ½ tsp cumin
  • Salt & pepper to taste

Finishing Ingredients

  • 1 cup coconut milk or cream
  • Olive oil, for serving


Instructions

  1. Prepare ingredients: Peel and chop the carrots, dice the onion, and mince the garlic to ensure all ingredients are ready for slow cooking.
  2. Add to slow cooker: Place the carrots, diced onion, minced garlic, vegetable broth, ground ginger, cumin, salt, and pepper into the slow cooker. Stir gently to combine the spices with the vegetables.
  3. Slow cook: Cook the mixture on Low for 6–8 hours or on High for 3–4 hours, until the carrots are very tender and easily pierced with a fork.
  4. Blend the soup: Use an immersion blender directly in the slow cooker to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and puree.
  5. Add coconut milk: Stir in the coconut milk or cream to add richness and silkiness to the soup. Adjust seasoning with additional salt and pepper if needed.
  6. Serve: Ladle the soup into bowls and drizzle with olive oil for extra flavor and a lovely finish. Optionally, serve with a dash of orange juice for brightness.
