- 2 lbs carrots, peeled & chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp ground ginger
- ½ tsp cumin
- Salt & pepper to taste
Finishing Ingredients
- 1 cup coconut milk or cream
- Olive oil, for serving
Instructions
- Prepare ingredients: Peel and chop the carrots, dice the onion, and mince the garlic to ensure all ingredients are ready for slow cooking.
- Add to slow cooker: Place the carrots, diced onion, minced garlic, vegetable broth, ground ginger, cumin, salt, and pepper into the slow cooker. Stir gently to combine the spices with the vegetables.
- Slow cook: Cook the mixture on Low for 6–8 hours or on High for 3–4 hours, until the carrots are very tender and easily pierced with a fork.
- Blend the soup: Use an immersion blender directly in the slow cooker to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and puree.
- Add coconut milk: Stir in the coconut milk or cream to add richness and silkiness to the soup. Adjust seasoning with additional salt and pepper if needed.
- Serve: Ladle the soup into bowls and drizzle with olive oil for extra flavor and a lovely finish. Optionally, serve with a dash of orange juice for brightness.
