Description
A creamy, spicy slow cooker chicken pasta dish with tender shredded chicken, sautéed peppers, and a cheesy Parmesan sauce. Ready with minimal effort and packed with bold Cajun flavor.
Ingredients
1 ½ pounds boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
1 teaspoon paprika
½ teaspoon garlic powder
Salt and pepper, to taste
1 tablespoon olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
½ yellow onion, sliced
3 cups low-sodium chicken broth
8 ounces cream cheese, cubed
1 cup shredded Parmesan cheese
12 ounces penne or rotini pasta
Optional garnish: fresh parsley, extra Parmesan, crushed red pepper flakes
Instructions

Rub chicken with Cajun seasoning, garlic powder, paprika, salt, and pepper. (Optional: marinate 15-20 minutes).

Place chicken, sliced peppers, onion, and broth into slow cooker. Cook on low 6–7 hours or high 3–4 hours.

Remove chicken, shred, return to slow cooker.

Add cream cheese and Parmesan, stir until melted and creamy. Cook an additional 10–15 minutes.

Cook pasta separately until al dente, drain. Stir pasta into slow cooker mixture.
