- 2 lbs beef short ribs
Liquid and Aromatics
- 1 cup beer (or beef broth)
- 1 onion, sliced
- 2 cloves garlic, minced
Seasoning and Oil
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- 1 sprig rosemary
Instructions
- Sear the Ribs: Heat olive oil in a hot skillet or pan over medium-high heat. Season the beef short ribs with salt and pepper, then sear them on all sides until they develop a rich brown crust, about 3-4 minutes per side. This step locks in flavor.
- Prepare the Slow Cooker: Place the seared short ribs into the slow cooker. Add the sliced onions, minced garlic, and a sprig of rosemary on top of the ribs.
- Add Liquid: Pour 1 cup of beer or beef broth over the ribs and aromatics in the slow cooker. This liquid will keep the meat moist while infusing it with flavor during cooking.
- Cook Low and Slow: Cover the slow cooker and cook on Low for 8 hours or on High for 4 hours, until the ribs are tender enough to pull apart easily with a fork.
- Optional Sauce Reduction: After cooking, for a thicker sauce, carefully remove the ribs and transfer the cooking liquid to a saucepan. Simmer the liquid on the stove over medium heat until it reduces to your preferred consistency, then pour over the ribs before serving.
