Description

Rich, tender beef short ribs slow-cooked in beer or beef broth with aromatic onions, garlic, and herbs, resulting in melt-in-your-mouth perfection perfect for a hearty dinner.

Ingredients

Beef Short Ribs

  • 2 lbs beef short ribs

Liquid and Aromatics

  • 1 cup beer (or beef broth)
  • 1 onion, sliced
  • 2 cloves garlic, minced

Seasoning and Oil

  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 sprig rosemary

Instructions

  1. Sear the Ribs: Heat olive oil in a hot skillet or pan over medium-high heat. Season the beef short ribs with salt and pepper, then sear them on all sides until they develop a rich brown crust, about 3-4 minutes per side. This step locks in flavor.
  2. Prepare the Slow Cooker: Place the seared short ribs into the slow cooker. Add the sliced onions, minced garlic, and a sprig of rosemary on top of the ribs.
  3. Add Liquid: Pour 1 cup of beer or beef broth over the ribs and aromatics in the slow cooker. This liquid will keep the meat moist while infusing it with flavor during cooking.
  4. Cook Low and Slow: Cover the slow cooker and cook on Low for 8 hours or on High for 4 hours, until the ribs are tender enough to pull apart easily with a fork.
  5. Optional Sauce Reduction: After cooking, for a thicker sauce, carefully remove the ribs and transfer the cooking liquid to a saucepan. Simmer the liquid on the stove over medium heat until it reduces to your preferred consistency, then pour over the ribs before serving.

Notes

  • Use beer for a richer, deeper flavor or substitute with beef broth if preferred or for a milder taste.
  • To enhance the herb flavor, add additional rosemary or thyme sprigs.
  • The ribs can be prepared a day ahead; just reheat gently before serving.
  • For a thicker sauce, reduce the cooking liquid on the stove after slow cooking.
  • Serve with mashed potatoes, polenta, or crusty bread to soak up the delicious sauce.
