Description

Tender, flavorful balsamic beef slow-cooked to perfection, ideal for busy weeknights or meal prep. This easy recipe combines a savory blend of balsamic vinegar, soy sauce, and spices to create a rich and comforting main dish that requires minimal effort.

Ingredients

Beef Roast

  • 34 lb beef chuck roast

Liquid Mixture

  • 1 cup beef broth
  • 1/3 cup balsamic vinegar
  • 2 tbsp soy sauce or coconut aminos
  • 2 tbsp brown sugar or honey
  • 1 tbsp Worcestershire sauce

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Vegetables

  • 1 onion, sliced
  • 3 cloves garlic, minced

Instructions

  1. Prepare the Base: Place the sliced onion and minced garlic in the bottom of the slow cooker, creating a flavorful base for the roast to sit on while cooking.
  2. Season the Beef: Rub the beef chuck roast evenly with salt, black pepper, garlic powder, onion powder, and dried thyme to ensure the meat is well-seasoned.
  3. Layer the Roast: Place the seasoned beef roast directly on top of the onions and garlic in the slow cooker.
  4. Mix the Sauce: In a separate bowl, whisk together the beef broth, balsamic vinegar, soy sauce (or coconut aminos), brown sugar (or honey), and Worcestershire sauce until fully combined.
  5. Add the Sauce: Pour the liquid mixture evenly over the beef roast, allowing the flavors to distribute during cooking.
  6. Slow Cook: Cover and cook on low heat for 8 hours or on high heat for 4 to 5 hours until the beef is tender and easy to shred.
  7. Serve: Once cooked, shred or slice the beef and return it to the slow cooker juices to soak up the rich flavors before serving.

Notes

  • For a thicker sauce, transfer the cooking liquid to a saucepan and simmer on the stovetop until reduced to desired consistency.
  • Add carrots or potatoes to the slow cooker along with the beef for a complete one-pot meal.
  • Leftover balsamic beef roast freezes well, making for easy future meals.
