Ingredients
Beef Roast
- 3–4 lb beef chuck roast
Liquid Mixture
- 1 cup beef broth
- 1/3 cup balsamic vinegar
- 2 tbsp soy sauce or coconut aminos
- 2 tbsp brown sugar or honey
- 1 tbsp Worcestershire sauce
Seasonings
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Vegetables
- 1 onion, sliced
- 3 cloves garlic, minced
Instructions
- Prepare the Base: Place the sliced onion and minced garlic in the bottom of the slow cooker, creating a flavorful base for the roast to sit on while cooking.
- Season the Beef: Rub the beef chuck roast evenly with salt, black pepper, garlic powder, onion powder, and dried thyme to ensure the meat is well-seasoned.
- Layer the Roast: Place the seasoned beef roast directly on top of the onions and garlic in the slow cooker.
- Mix the Sauce: In a separate bowl, whisk together the beef broth, balsamic vinegar, soy sauce (or coconut aminos), brown sugar (or honey), and Worcestershire sauce until fully combined.
- Add the Sauce: Pour the liquid mixture evenly over the beef roast, allowing the flavors to distribute during cooking.
- Slow Cook: Cover and cook on low heat for 8 hours or on high heat for 4 to 5 hours until the beef is tender and easy to shred.
- Serve: Once cooked, shred or slice the beef and return it to the slow cooker juices to soak up the rich flavors before serving.
Notes
- For a thicker sauce, transfer the cooking liquid to a saucepan and simmer on the stovetop until reduced to desired consistency.
- Add carrots or potatoes to the slow cooker along with the beef for a complete one-pot meal.
- Leftover balsamic beef roast freezes well, making for easy future meals.
