Shrimp
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
Avocado Lime Sauce
- 1 ripe avocado
- ¼ cup sour cream or Greek yogurt
- Juice of 1 lime
- 1 clove garlic
- 2 tbsp cilantro (optional)
- Salt, to taste
Tacos
- 8 small corn or flour tortillas
- 2 cups shredded cabbage or slaw mix
- Pico de gallo or diced tomatoes, for topping
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Season the Shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, salt, and black pepper until they are evenly coated.
- Cook the Shrimp: Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2–3 minutes per side until they turn pink and opaque. Remove the shrimp from the heat and set aside.
- Prepare Avocado Lime Sauce: In a blender or food processor, combine the ripe avocado, sour cream or Greek yogurt, lime juice, garlic, cilantro (if using), and salt. Blend until smooth and creamy.
- Warm the Tortillas: Warm the tortillas either in a dry skillet over medium heat for about 30 seconds per side or in the microwave wrapped in a damp towel until pliable.
- Assemble the Tacos: Place shredded cabbage or slaw mix onto each tortilla, add cooked shrimp, drizzle with avocado lime sauce, and top with pico de gallo or diced tomatoes and fresh cilantro as desired.
- Serve: Serve the assembled tacos immediately with lime wedges on the side for additional citrus zing.
Notes
- Do not overcook the shrimp as they cook very quickly and become rubbery if overdone.
- The avocado lime sauce can be thinned with a splash of water or milk if it’s too thick.
- For extra heat, add sliced jalapeños to the topping.
