Enjoy these crispy and flavorful Vietnamese shrimp fritters paired with a tangy Nuoc Cham dipping sauce. A quick, easy appetizer perfect for parties or weeknight dinners. Gluten-free adaptable.
Ingredients
1 lb shrimp, peeled, deveined, chopped
1/2 cup rice flour
1/4 cup all-purpose flour
1/4 tsp baking powder
1/2 cup cold water
1 egg
1/4 tsp salt
1/4 tsp black pepper
2 green onions, finely chopped
1/4 cup cilantro, chopped
1/4 cup fresh mint leaves (optional)
1–2 small red chilies, finely chopped (optional)
Vegetable oil for frying
Nuoc Cham Dipping Sauce:
3 tbsp fish sauce
1 tbsp sugar
2 tbsp lime juice
1/4 cup warm water
1 garlic clove, minced
1–2 small red chilies, finely chopped (optional)
1 tbsp rice vinegar (optional)
Instructions

Whisk fish sauce, sugar, lime juice, warm water until sugar dissolves. Stir in garlic and chilies. Add rice vinegar if desired. Set aside for 10 minutes.

Combine shrimp, green onions, cilantro, mint, and chilies.

Whisk rice flour, all-purpose flour, baking powder, salt, and pepper. Add egg and water; stir to form batter. Fold shrimp mixture in.

Heat oil to 350-375°F. Fry spoonfuls of batter, flatten slightly. Cook 2-3 minutes per side until golden and crisp. Drain on paper towels.

Serve hot with dipping sauce.
Notes
- For gluten-free, substitute all-purpose flour with gluten-free flour blend.
- Adjust chili quantity for desired heat.
