Description

A classic British shepherd’s pie featuring a savory layer of seasoned ground beef and vegetables, topped with creamy mashed potatoes and baked until golden and bubbly for a comforting, hearty meal.

Ingredients

Main Ingredients

  • 1 lb ground beef or lamb
  • 1 cup carrots and peas (mixed)
  • 2 cups mashed potatoes
  • 1 cup beef broth
  • 1 tbsp butter
  • Salt & pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400 °F (200 °C) to prepare for baking the shepherd’s pie.
  2. Brown the Meat: In a skillet over medium heat, cook the ground beef (or lamb) until it’s fully browned and no longer pink, breaking it apart as it cooks.
  3. Add Broth and Vegetables: Stir in the beef broth along with the mixed carrots and peas, then cook for a few minutes until the vegetables are just tender and the liquid reduces slightly.
  4. Assemble the Pie: Spread the meat and vegetable mixture evenly in a baking dish, then spoon and smooth the mashed potatoes over the top to completely cover the filling.
  5. Bake: Place the assembled dish in the preheated oven and bake for 25 minutes until the mashed potato topping is golden brown and the filling is bubbling around the edges.

Notes

  • For a low-carb alternative, substitute the mashed potatoes with cauliflower mash.
  • You can add herbs like thyme or rosemary to enhance the flavor.
  • Use leftover mashed potatoes to save prep time.
  • Ensure the mashed potatoes cover the filling well to prevent drying out.
