Description

Sesame Chicken Fried Rice is a quick and flavorful Asian-inspired dish that combines tender diced chicken, mixed vegetables, and day-old rice stir-fried in soy sauce and fragrant sesame oil. Enhanced with scrambled eggs, garlic, ginger, and topped with toasted sesame seeds and fresh green onions, this one-pan meal is perfect for a satisfying dinner or lunch and makes great use of leftover rice.

Ingredients

Main Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup cooked chicken, diced
  • 2 eggs, lightly beaten

Vegetables and Aromatics

  • 1/2 cup peas and carrots
  • 2 green onions, sliced
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Seasonings and Oils

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Heat oil and aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger and cook for about 30 seconds until fragrant.
  2. Cook eggs: Push the aromatics to one side of the pan and pour in the beaten eggs. Stir to scramble the eggs until they are fully cooked and then combine them with the aromatics.
  3. Add chicken and vegetables: Add the diced cooked chicken along with the peas and carrots to the pan. Stir-fry together for 2 to 3 minutes until the vegetables are heated through.
  4. Incorporate rice: Add the cooked rice to the skillet, breaking up any clumps with your spatula to ensure even cooking and mixing.
  5. Season the dish: Pour in the soy sauce and sesame oil. Stir well to evenly coat all ingredients. Continue cooking and stirring for about 3 to 4 minutes so the flavors meld and the rice is heated through.
  6. Garnish and serve: Sprinkle sesame seeds and sliced green onions on top just before serving for added flavor and texture.

Notes

  • Day-old rice works best because it is drier and stays firm when stir-fried, preventing clumping.
  • Feel free to add extra vegetables like bell peppers or broccoli for added nutrition and color.
  • Use cooked chicken leftovers or rotisserie chicken to save prep time.
  • Adjust soy sauce quantity to taste depending on salt preference.
