Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ½ tsp sage or thyme
Wet Ingredients & Add-ins
- 6 tbsp cold butter, cubed
- ½ cup pumpkin purée
- ¼ cup buttermilk
- ½ cup shredded sharp cheddar
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the scones.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and your choice of sage or thyme until evenly combined.
- Cut in Butter: Add the cold, cubed butter to the dry mixture and use a fork or pastry cutter to cut it in until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
- Add Wet Ingredients and Cheese: Stir in the pumpkin purée, buttermilk, and shredded sharp cheddar cheese until the dough just comes together. Avoid overmixing to keep the scones tender.
- Shape Dough: Turn the dough onto a floured surface and gently pat it into a 7-8 inch diameter disc about 1 inch thick.
- Cut Scones: Using a sharp knife or bench scraper, cut the disc into 8 equal wedges.
- Bake: Place the wedges on a baking sheet and bake in the preheated oven for 18–20 minutes, or until they are golden brown on top and cooked through.
- Serve: Allow the scones to cool slightly, then serve warm with butter or alongside your favorite soup.
Notes
- Serve warm with butter or alongside a hearty soup for a comforting meal.
- Add a pinch of cayenne pepper to the dough for a subtle spicy kick.
- To ensure flakiness, keep butter chilled until ready to mix and avoid overworking the dough.
- Substitute thyme for sage if desired to change the herb profile.
