Instructions

  4. Cook the spinach: Add 1 cup of fresh spinach to the skillet and cook until wilted, which usually takes a couple of minutes.
  5. Warm barley: Gently warm the cooked barley either in the microwave or on the stovetop and then transfer it to serving bowls.
  6. Combine toppings: Spoon the sautéed mushroom and spinach mixture over the warm barley in the bowls.
  7. Cook the egg: Prepare the egg to your preference—fried, poached, or soft-boiled—and place it on top of the barley and vegetable bowl.
