Description
Seared beef chops infused with aromatic sage and apple cider create a cozy autumn-inspired meal complemented by a sweet-savory cider pan gravy. This easy skillet recipe results in tender, flavorful chops perfect for a comforting dinner.
Ingredients
Beef Chops
- 4 beef chops (about 1½ lb)
- 1 tsp sage
- Salt & pepper, to taste
For Searing and Gravy
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tbsp flour
- 1 cup apple cider
- ½ cup beef broth
Instructions
- Season the Beef Chops: Generously season the beef chops on both sides with salt, pepper, and sage. This ensures the chops absorb the aromatic flavors during cooking.
- Heat the Skillet and Sear: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the beef chops and sear each side for 3 to 4 minutes until nicely browned. Remove the chops from the skillet and keep them warm.
- Make the Pan Gravy: Reduce the heat to medium. Whisk the flour into the remaining fat and drippings in the skillet along with the butter, stirring continuously to form a roux. Slowly pour in the apple cider and beef broth, whisking constantly to avoid lumps. Cook until the gravy thickens, about 2 to 3 minutes.
- Simmer with Chops: Return the seared beef chops to the skillet, spooning the gravy over them. Reduce the heat to low and let everything simmer together for 5 to 7 minutes to allow the flavors to meld and the meat to finish cooking to your desired doneness.
- Serve: Remove the chops from the skillet and serve hot, spooning the cider pan gravy on top. Enjoy with your favorite sides like roasted sweet potatoes or steamed vegetables.
Notes
- Substitute pork chops for a milder flavor if preferred.
- Delicious served with roasted sweet potatoes for an autumn-themed meal.
- Ensure not to overcook the chops to maintain tenderness.
- The cider gravy can be thickened further by adjusting the flour quantity.
