For Searing and Gravy

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup apple cider
  • ½ cup beef broth


Instructions

  1. Season the Beef Chops: Generously season the beef chops on both sides with salt, pepper, and sage. This ensures the chops absorb the aromatic flavors during cooking.
  2. Heat the Skillet and Sear: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the beef chops and sear each side for 3 to 4 minutes until nicely browned. Remove the chops from the skillet and keep them warm.
  3. Make the Pan Gravy: Reduce the heat to medium. Whisk the flour into the remaining fat and drippings in the skillet along with the butter, stirring continuously to form a roux. Slowly pour in the apple cider and beef broth, whisking constantly to avoid lumps. Cook until the gravy thickens, about 2 to 3 minutes.
