Ribeye Steaks
- 2 ribeye steaks (12–14 oz each)

- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cloves garlic, smashed
- 2 sprigs fresh rosemary or thyme
Herb Butter
- 4 tablespoons unsalted butter, softened
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon fresh thyme or rosemary, chopped
- 1 clove garlic, minced
- ½ teaspoon lemon zest
- Pinch of salt
Instructions
- Prepare Steaks: Remove steaks from the refrigerator 30 minutes before cooking to bring them to room temperature. Pat dry with paper towels and season generously with salt and freshly ground black pepper on both sides.
- Heat Skillet: Place a cast-iron skillet over medium-high heat and add the olive oil, allowing it to heat until shimmering but not smoking.
- Sear Steaks: Place the ribeye steaks in the hot skillet and sear for 4–5 minutes on each side until a deep brown crust forms, indicating a good Maillard reaction.
- Add Butter and Herbs: Reduce heat to medium. Add the butter, smashed garlic cloves, and fresh rosemary or thyme sprigs to the pan.
- Baste Steaks: Tilt the pan slightly and use a spoon to continuously baste the melted butter, garlic, and herbs over the steaks for 1–2 minutes to infuse them with flavor.
- Rest Steaks: Transfer the steaks to a plate and loosely tent with foil. Let them rest for 5–10 minutes to allow the juices to redistribute, ensuring a juicy steak.
- Make Herb Butter: In a small bowl, combine the softened unsalted butter, chopped parsley, thyme or rosemary, minced garlic, lemon zest, and a pinch of salt. Mix until well incorporated.
