Instructions
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt until well combined.
- Combine Wet Ingredients: In another bowl, mix the buttermilk, egg, melted butter, vanilla extract, and red food coloring until smooth.
- Make the Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. It’s okay if there are some lumps; do not overmix to keep the pancakes fluffy.
- Heat the Skillet: Warm a nonstick skillet or griddle over medium heat and lightly grease it to prevent sticking.
- Cook Pancakes: Pour about ¼ cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles appear on the surface and the edges look set.
- Flip and Finish Cooking: Carefully flip the pancakes and cook for another 1–2 minutes until they are cooked through and fluffy.
- Prepare Frosting: In a small bowl, whisk together softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and pourable.
