Ingredients
Crust:
- 1 cup almond flour
- 2 tbsp melted butter
- 2 tbsp powdered sweetener
- 1/2 tsp vanilla extract
Coconut Filling:
- 1 cup unsweetened shredded coconut
- 1/2 cup sugar-free sweetened condensed milk or coconut cream
- 2 tbsp powdered sweetener
- 1 tsp vanilla extract
Chocolate Topping:
- 1 cup sugar-free chocolate chips
- 1 tbsp coconut oil
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crust.
- Prepare Crust: In a mixing bowl, combine almond flour, melted butter, powdered sweetener, and vanilla extract until well mixed. Press this mixture firmly into a parchment-lined baking pan to form an even crust layer.
- Bake Crust: Bake the crust in the preheated oven for 8–10 minutes until lightly golden. Remove and allow it to cool completely to ensure the filling sets properly.
- Make Coconut Filling: In another bowl, mix the unsweetened shredded coconut, sugar-free sweetened condensed milk (or coconut cream), powdered sweetener, and vanilla extract until fully combined. Spread this mixture evenly over the cooled crust layer.
- Prepare Chocolate Topping: Melt the sugar-free chocolate chips and coconut oil together using a double boiler or microwave in short bursts, stirring frequently until smooth and glossy.
- Assemble and Chill: Pour the melted chocolate mixture evenly over the coconut filling layer. Place the pan in the refrigerator and chill for 1–2 hours until the chocolate topping has firmed up and the bars are set.
- Serve: Once chilled, cut into 12 bars and serve. Store leftovers in the refrigerator or freeze for longer storage.

- These bars can be frozen for up to 2 months; thaw before serving.
- Adding chopped almonds to the coconut filling adds a pleasant texture and crunch.
