- 1 can chickpeas (drained and rinsed, about 15 oz)
- ½ cup pumpkin purée
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 garlic clove
- ½ tsp ground cumin
- Salt to taste
- 2–3 tbsp olive oil

Instructions
- Prepare ingredients: Drain and rinse the chickpeas thoroughly. Peel the garlic clove and gather all other ingredients to have them ready for blending.
- Blend base ingredients: In a food processor, combine chickpeas, pumpkin purée, tahini, lemon juice, garlic, ground cumin, and salt. Process until the mixture begins to become smooth.
- Add olive oil: While the food processor is running, slowly stream in 2 to 3 tablespoons of olive oil, blending continuously until the hummus reaches a creamy and smooth consistency.
- Adjust seasoning and texture: Taste the hummus and add more salt, lemon juice, or cumin as preferred. If the hummus is too thick, add a small amount of water or olive oil to loosen it to desired consistency.
- Serve and garnish: Transfer the pumpkin hummus to a serving bowl. Sprinkle with paprika and pepitas if using. Serve immediately with pita chips, vegetable sticks, or your favorite dippers.
Notes
- This pumpkin hummus can be made ahead and refrigerated in an airtight container for 4 to 5 days.
- For a spicy kick, add a pinch of cayenne pepper when blending.
- If canned chickpeas are not available, cooked dried chickpeas can be used instead.
- If pumpkin purée is not on hand, canned pure pumpkin (not pumpkin pie filling) works well.
