Instructions
- Preheat the oven and prepare the pan. Set your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease it lightly to prevent sticking.
- Combine dry ingredients. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger until evenly blended to ensure the spices and leavening are well distributed.
- Mix wet ingredients. In a large mixing bowl, combine the pumpkin purée, sugar, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth and homogenous.
- Incorporate dry into wet. Gradually add the dry ingredient mixture into the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the bars tender.
- Fold in chocolate chips. Gently fold the chocolate chips into the batter, distributing them evenly without overworking the mixture.
- Spread and bake. Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
- Cool and serve. Allow the bars to cool completely in the pan before slicing into 12 to 16 pieces to serve.
