Description

Soft, cake-like pumpkin bars loaded with chocolate chips and warm fall spices, perfect for a cozy autumn treat.

Ingredients

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger

Wet Ingredients

  • 1 cup pumpkin purée
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven and prepare the pan. Set your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease it lightly to prevent sticking.
  2. Combine dry ingredients. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger until evenly blended to ensure the spices and leavening are well distributed.
  3. Mix wet ingredients. In a large mixing bowl, combine the pumpkin purée, sugar, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth and homogenous.
  4. Incorporate dry into wet. Gradually add the dry ingredient mixture into the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the bars tender.
  5. Fold in chocolate chips. Gently fold the chocolate chips into the batter, distributing them evenly without overworking the mixture.
  6. Spread and bake. Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  7. Cool and serve. Allow the bars to cool completely in the pan before slicing into 12 to 16 pieces to serve.

Notes

  • Do not overbake to keep bars moist and soft.
  • For extra flavor, you can toast the spices before mixing.
  • Use freshly grated nutmeg for a more intense aroma if available.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars freeze well; thaw before serving.
