Easy no-bake chickpea and date snack bars made with wholesome ingredients, naturally sweetened, and packed with protein and fiber. Perfect for a healthy snack or breakfast on the go.
Ingredients
1 cup (165 g) cooked chickpeas, drained and rinsed
1 cup (150 g) pitted dates
1/2 cup (50 g) rolled oats
1/4 cup (60 g) nut butter (peanut or almond)
1 tbsp (15 ml) honey or maple syrup
1 tsp (5 ml) vanilla extract
1/2 tsp (1 g) ground cinnamon
1/4 tsp (1 g) salt
1/4 cup (30 g) dark chocolate chips (optional)
Instructions

Blend chickpeas and dates until smooth.

Add oats, nut butter, sweetener, vanilla, cinnamon, and salt; blend until combined.

Fold in chocolate chips by hand.

Press mixture into an 8×8 inch parchment-lined dish.

Chill for 1 hour and cut into bars
Notes
- Soak dry dates in warm water to soften.
- Use gluten-free oats to keep bars gluten-free.
- Store bars in the fridge or freeze for longer storage.
