Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to ensure it reaches the perfect temperature by the time your dough is ready.
- Mix wet ingredients: In a mixing bowl, combine the softened butter, powdered sweetener, egg, and vanilla extract. Stir well until the mixture is smooth and creamy.
- Add dry ingredients: Gradually add the almond flour, baking powder, and a pinch of salt to the wet mixture. Stir until all ingredients are well incorporated, forming a soft dough.
- Fold in pistachios: Gently mix the chopped pistachios into the dough, ensuring they are evenly distributed throughout.
- Press into baking dish: Line a baking dish with parchment paper. Evenly press the dough into the dish, flattening the surface for an even bake.
- Bake the cookie squares: Place the dish in the preheated oven and bake for 15 to 18 minutes, until the edges are lightly golden and the center is set.
- Cool and slice: Remove from oven and allow to cool completely in the dish. Once cooled, slice into 12 squares for serving.
