Description

Soft and chewy sugar cookie squares topped with chopped pistachios for a nutty flavor and festive color. These almond flour-based squares offer a delicious low-carb alternative to traditional sugar cookies, perfect for holiday trays or everyday treats.

Ingredients

Dry Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup powdered sweetener
  • 1 tsp baking powder
  • Pinch of salt

Wet Ingredients

  • 4 tbsp softened butter
  • 1 egg
  • 1 tsp vanilla extract

Topping

  • 1/3 cup chopped pistachios

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to ensure it reaches the perfect temperature by the time your dough is ready.
  2. Mix wet ingredients: In a mixing bowl, combine the softened butter, powdered sweetener, egg, and vanilla extract. Stir well until the mixture is smooth and creamy.
  3. Add dry ingredients: Gradually add the almond flour, baking powder, and a pinch of salt to the wet mixture. Stir until all ingredients are well incorporated, forming a soft dough.
  4. Fold in pistachios: Gently mix the chopped pistachios into the dough, ensuring they are evenly distributed throughout.
  5. Press into baking dish: Line a baking dish with parchment paper. Evenly press the dough into the dish, flattening the surface for an even bake.
  6. Bake the cookie squares: Place the dish in the preheated oven and bake for 15 to 18 minutes, until the edges are lightly golden and the center is set.
  7. Cool and slice: Remove from oven and allow to cool completely in the dish. Once cooled, slice into 12 squares for serving.

Notes

  • Optionally drizzle white chocolate over the cooled cookie squares for added sweetness and decoration.
  • Chopped pecans or almonds can be used instead of pistachios for variation.
  • These squares freeze well, making them great for meal prep or gifting.
