Description

This Pink Smoothie with Coconut Whipped Cream is a creamy, refreshing, and naturally vibrant smoothie made with frozen strawberries, raspberries, and banana, blended with coconut or almond milk. Topped with fluffy, dairy-free coconut whipped cream, it’s a perfect healthy treat for Valentine’s Day, brunch, or a dessert-style snack.

Ingredients

Pink Smoothie

  • 1 cup frozen strawberries
  • ½ cup frozen raspberries
  • 1 frozen banana
  • ¾ cup coconut milk or almond milk
  • 1 tbsp honey or maple syrup (optional)
  • ½ tsp vanilla extract

Coconut Whipped Cream

  • 1 can full-fat coconut milk, chilled overnight
  • 12 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Prepare Coconut Whipped Cream: Open the chilled coconut milk can carefully and scoop out only the solid cream, discarding or saving the leftover liquid for another use.
  2. Whip Coconut Cream: Whip the coconut cream together with powdered sugar and vanilla extract until light and fluffy. Place it in the refrigerator to keep chilled until serving.
  3. Blend Smoothie: Add the frozen strawberries, raspberries, frozen banana, coconut or almond milk, optional sweetener (honey or maple syrup), and vanilla extract into a blender.
  4. Blend Until Smooth: Blend all ingredients on high speed until creamy and smooth in texture.
  5. Serve: Pour the smoothie into serving glasses.
  6. Top and Garnish: Spoon the coconut whipped cream on top of each smoothie glass. Optionally, garnish with fresh berries or shredded coconut for added texture and visual appeal.
  7. Enjoy Immediately: Serve the smoothie right away to enjoy its best flavor and texture.

Notes

  • Chill coconut milk for at least 12 hours before whipping for best results.
  • For a deeper pink color, add a small amount of cooked beets or beet powder into the smoothie.
  • Using only frozen fruit can help thicken the smoothie naturally.
  • This smoothie is best served immediately to retain freshness and texture.
