Description

Pig Shots are smoky, savory bite-sized appetizers featuring smoked sausage wrapped in crispy bacon and filled with a creamy cheese mixture. Perfect as a BBQ favorite, these flavorful snacks make for a delightful party appetizer or game day treat.

Ingredients

Meat

  • 14 oz smoked sausage, sliced into ½-inch rounds
  • 1 lb bacon, cut in half

Cheese Filling

  • 8 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 1 jalapeño, finely diced (optional)
  • ½ tsp garlic powder

Seasoning

  • BBQ rub, to taste

Instructions

  1. Prepare the Sausage and Bacon: Wrap each ½-inch slice of smoked sausage with half a strip of bacon. Secure each wrapped piece with a toothpick to keep the bacon in place while cooking.
  2. Make the Cheese Filling: In a bowl, combine the softened cream cheese, shredded cheddar cheese, finely diced jalapeño (if using), and garlic powder. Mix thoroughly until evenly blended.
  3. Fill the Bacon Cups: Spoon the cheese mixture into each bacon-wrapped sausage slice, creating a little cheesy cup on top.
  4. Season: Lightly sprinkle BBQ rub over each filled pig shot to enhance smoky, savory flavors.
  5. Cook: Place the pig shots on a smoker or baking tray. Cook at 375°F (190°C) for 35 to 45 minutes, or until the bacon is crispy and cheese filling is bubbly and warm.

Notes

  • Use thin bacon for the best texture and crispiness.
  • If a smoker is not available, baking in the oven at 375°F works perfectly well.
  • Adjust jalapeño quantity to control spiciness or omit for mild flavor.
