Description

This cozy soup features cheese-and-potato pierogi, savoy cabbage, and a creamy paprika and cumin-spiced broth, finished with fresh dill for warmth and flavor.


Ingredients

1 tbsp vegetable oil

1 yellow onion, diced

2 carrots, sliced into half-moons

1 garlic clove, minced

1 tsp sweet paprika

1 tsp ground cumin

5 cups chicken broth

¼ head savoy cabbage, chopped

3 tbsp cheese spread, softened

12 cheese-potato pierogi

3 tbsp fresh dill, chopped

Freshly ground black pepper


Instructions

  1. Sauté onion, carrots, and garlic in oil over medium heat for 3 minutes.

  2. Stir in paprika and cumin; add broth and bring to a boil.

  3. Add cabbage, cover, and simmer 10 minutes.

  4. Whisk in cheese spread until melted.

  5. Add pierogi and cook until they float (3–8 minutes).

  6. Remove from heat, stir in dill, season with pepper, and serve.

Notes

  • Use vegetable broth for vegetarian version.
  • Add sliced sausage for extra flavor.
