Description
Perfectly seasoned, slow-roasted prime rib with a flavorful herb crust and tender, juicy center — ideal for Christmas or New Year’s dinners.
Ingredients
Prime Rib
- 1 (4–6 lb) bone-in prime rib
Seasoning
- 4 cloves garlic, minced
- 2 tbsp rosemary
- 2 tbsp thyme
- 2 tbsp salt
- 1 tbsp black pepper
- ¼ cup olive oil or melted butter
Instructions
- Preheat Oven: Preheat your oven to 450°F (230°C) to ensure it is hot enough to develop a beautiful crust on the prime rib.
- Prepare the Roast: Rub the prime rib thoroughly with minced garlic, rosemary, thyme, salt, black pepper, and olive oil or melted butter, making sure the herb crust is evenly coated over the entire surface.
- Initial Roasting: Place the roast in a roasting pan and cook in the preheated oven for 20 minutes. This high heat helps form the crust and locks in the juices.
- Lower Oven Temperature: Reduce the oven temperature to 325°F (165°C) and continue roasting the prime rib for 1½ to 2 hours, or until it reaches your desired internal temperature for doneness.
- Rest the Meat: Remove the roast from the oven and let it rest, uncovered, for 20 minutes. This allows the juices to redistribute for a tender and juicy slice.
Notes
- Use a meat thermometer for best results; 135°F (57°C) internal temperature is recommended for medium rare.
- Let the roast rest for 20 minutes before slicing to maintain juiciness.
- Serve with au jus or creamy horseradish sauce for added flavor.
- Bone-in prime rib adds flavor and helps keep the roast moist while cooking.
