Description

These homemade Peach Fritters are the ultimate seasonal indulgence. Loaded with fresh peaches and topped with a sweet vanilla glaze, they’re a crispy-on-the-outside, fluffy-on-the-inside treat perfect for summer breakfasts, brunches, or desserts.


Ingredients

For the Fritters:

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon (optional)

2 large eggs

3/4 cup whole milk

2 teaspoons vanilla extract

2 cups peeled and diced fresh peaches

Vegetable or canola oil, for frying

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract


Instructions

  1. Peel and dice the peaches. Set aside.

  2. In a large bowl, whisk flour, sugar, baking powder, salt, and cinnamon.

  3. In another bowl, beat eggs with milk and vanilla.

  4. Stir wet ingredients into dry until just combined. Fold in peaches.

  5. Heat oil to 350°F in a deep skillet or Dutch oven.

  6. Drop heaping tablespoons of batter into the oil. Fry 2–3 minutes per side.

  7. Drain on paper towels.

  8. Mix glaze ingredients until smooth. Drizzle or dip the tops of warm fritters.

  9. Serve immediately or store as directed.

Notes

  • Fritters are best served fresh, but leftovers can be stored for up to 2 days.
  • Reheat in the oven to regain crispiness.
