The slow cooking process results in melt-in-your-mouth beef infused with a perfect balance of sweet citrus and aromatic spices, making it ideal for serving over steamed rice or noodles.
Ingredients
Beef and Seasoning
- 2 lbs beef chuck or beef short ribs, cut into large chunks
- Salt and black pepper to taste
Cooking Oils and Aromatics
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
Sauce
- 1 cup fresh orange juice
- 2 tablespoons orange zest
- 1/3 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 cup beef broth
Thickening Slurry (Optional)
- 1 tablespoon cornstarch
- 2 tablespoons water
Garnish
- 2 tablespoons sesame seeds
- 2 green onions, sliced
Instructions
- Season the Beef: Generously season the beef chunks with salt and black pepper to enhance flavor before cooking.
- Sear the Beef: Heat the vegetable oil in a large Dutch oven or heavy pot over medium-high heat. Add beef pieces and sear them until browned on all sides, about 3-4 minutes per side, then remove and set aside.
- Sauté Aromatics: In the same pot, add sesame oil and sauté the minced garlic and grated ginger for about 1 minute until fragrant, being careful not to burn the garlic.
- Add Sauce Ingredients: Stir in the fresh orange juice, orange zest, soy sauce, honey or brown sugar, rice vinegar, and beef broth, mixing well to combine all flavors.
- Braise the Beef: Return the seared beef to the pot, submerge in the sauce, and bring the mixture to a gentle simmer.
- Slow Cook: Cover the pot and cook over low heat for 1 hour 30 minutes to 2 hours, or until the beef becomes fork-tender and flavorful.
- Thicken Sauce (Optional): If a thicker sauce is preferred, mix the cornstarch with water to form a slurry, stir it into the sauce during the last few minutes of cooking, and cook until the sauce thickens slightly.
- Garnish and Serve: Remove from heat, garnish with toasted sesame seeds and sliced green onions, and serve hot over steamed rice or noodles.
Notes
- Beef chuck is ideal as it becomes tender and flavorful during slow braising.
- Fresh orange juice is recommended for a brighter, fresher citrus flavor compared to bottled juice.
- This recipe can be adapted for a slow cooker by cooking on low for 6–7 hours for equally tender results.
- Adjust sweetness by using either honey or brown sugar based on preference.
- For a gluten-free version, substitute soy sauce with a gluten-free tamari.
