Description
This Korean-Inspired One-Pot Beef and Rice recipe combines savory ground beef, aromatic garlic, and spicy gochujang chili paste with fluffy jasmine rice cooked in beef broth. It’s a quick, flavorful weeknight meal that includes healthy vegetables like spinach and carrots, all cooked in a single skillet for minimal cleanup and maximum comfort.
Ingredients
Main Ingredients
- 1 lb ground beef
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp gochujang (Korean chili paste)
- 1 tbsp brown sugar
Grains and Liquids
- 1 cup jasmine rice
- 2 cups beef broth or water
Vegetables
- 1 cup shredded carrots
- 1 cup baby spinach
Garnishes
- Sesame seeds
- Green onions, sliced
Instructions
- Brown the Beef: Heat sesame oil in a large skillet over medium heat. Add ground beef and cook, stirring and breaking it up with a spatula, until browned and cooked through, about 5-7 minutes.
- Add Aromatics and Sauces: Stir in the minced garlic, soy sauce, gochujang, and brown sugar. Cook for 1-2 minutes until everything is well combined and fragrant.
- Add Rice and Broth: Pour in the jasmine rice and beef broth (or water). Stir to combine all ingredients evenly. Increase the heat to bring the mixture to a simmer.
- Simmer the Rice: Once simmering, cover the skillet with a tight-fitting lid. Reduce heat to low and let cook for 15 minutes until the rice is tender and the liquid is absorbed.
- Add Vegetables: Remove the lid, stir in shredded carrots and baby spinach. Cover and cook for an additional 2 minutes or until the spinach wilts and carrots soften slightly.
- Garnish and Serve: Remove from heat, sprinkle with sesame seeds and sliced green onions. Serve hot and enjoy!
Notes
- Adjust the amount of gochujang according to your preferred spice level.
- For a quicker version, use pre-cooked or leftover rice, adding it after the beef mixture is ready, and cook only until vegetables are tender.
- You can substitute beef broth with water, but broth adds more flavor.
- If you prefer a less spicy dish, reduce or omit gochujang.
