Description

These moist banana muffins are bursting with fresh banana flavor and topped with a rich swirl of Nutella. A simple, no-fail recipe that uses 6 ripe bananas and makes the perfect breakfast or snack.

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

6 medium ripe bananas (about 2 cups mashed)

½ cup melted butter

½ cup packed light brown sugar

¼ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

⅓ cup Nutella

Instructions

  1. Preheat oven to 350°F. Line 18 muffin cups with paper liners.

  2. In a small bowl, whisk together flour, baking soda, baking powder, and salt.

  3. In a large bowl or stand mixer, beat mashed bananas, melted butter, sugars, eggs, and vanilla for 3 minutes.

  4. Add dry ingredients and mix just until combined.

  5. Warm Nutella in the microwave for 30 seconds until runny.

  6. Fill muffin liners ¾ full with batter. Add 1 tsp Nutella to each and swirl with a toothpick.

  7. Bake 15–18 minutes or until a toothpick inserted comes out clean.

  8. Cool in pan for 15 minutes, then transfer to wire rack.

Notes

  • Use overripe bananas for best flavor.
  • Don’t overmix after adding flour.
  • For a fun twist, stir mini chocolate chips into the batter.
