Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin to prevent sticking and ensure easy removal of mini quiches.
  2. Prepare Crust: Roll out the pie crust on a lightly floured surface and cut into 12 circles large enough to fit the muffin cups.
  3. Form Shells: Press each dough circle into the muffin cups, shaping them into mini tart shells.
  4. Mix Egg Mixture: In a medium bowl, whisk together the eggs, milk (or half-and-half), salt, black pepper, and garlic powder until well combined and slightly frothy.
  5. Add Spinach: Evenly divide the chopped fresh spinach among the prepared crusts in the muffin tin.
  6. Add Cheese: Sprinkle crumbled feta cheese and shredded mozzarella or Swiss cheese on top of the spinach in each shell.
  7. Fill with Egg Mixture: Pour the egg mixture into each muffin cup, filling them about three-quarters full to allow room for the quiches to puff up during baking.
  8. Bake: Bake in the preheated oven for 18 to 22 minutes or until the centers are set and the tops are lightly golden.
  9. Cool and Serve: Remove the mini quiches from the oven and allow them to cool slightly before carefully removing them from the muffin tin. Serve warm or at room temperature.
