Ingredients
1 medium head cauliflower, cut into florets
1 ½ cups cherry tomatoes, halved
½ cup red onion, thinly sliced
⅓ cup black olives (Kalamata)
⅓ cup green olives
¼ cup fresh parsley, chopped
¼ cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
1 teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes (optional)
Instructions

Blanch cauliflower in boiling water for 1-2 minutes; transfer to ice bath.
