Ingredients
2 lbs fresh ground beef
• 1 cup breadcrumbs
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 2 large eggs, beaten
• ¼ cup ketchup
• 2 tbsp Worcestershire sauce
• 1 tsp dried thyme
• 1 tsp dried oregano
• Salt and freshly ground black pepper to taste
• 2 cups mushrooms, sliced
• 4 tbsp unsalted butter
• 4 tbsp all-purpose flour
• 2 cups beef broth
• ½ cup heavy cream

Preheat oven to 350°F (175°C). Prepare baking dish.

Combine meatloaf ingredients gently. Shape into a loaf and bake 50–60 minutes until internal temp reaches 160°F (71°C).

For the gravy, sauté mushrooms in butter until golden. Stir in flour for 2 minutes. Gradually whisk in broth and cream until smooth and thickened. Season to taste.

Slice rested meatloaf and serve with mushroom gravy poured over the top.
