Description

Juicy chicken meatballs simmered in a creamy sun-dried tomato and Parmesan sauce — a deliciously comforting dish that earns its name with every bite.

Ingredients

Meatballs

  • 1 lb ground chicken
  • ¼ cup grated Parmesan
  • 1 egg

Sauce

  • ½ cup heavy cream
  • ½ cup chicken broth
  • ¼ cup sun-dried tomatoes, chopped
  • 1 tsp garlic, minced

Others

  • 1 tbsp olive oil

Instructions

  1. Prepare Meatball Mixture: In a bowl, combine ground chicken, grated Parmesan, and egg, mixing thoroughly until evenly combined. Form the mixture into evenly sized meatballs.
  2. Brown the Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and brown them on all sides. Once browned, remove the meatballs from the skillet and set aside.
  3. Make the Sauce: In the same skillet, add the minced garlic and sauté briefly until fragrant. Pour in the chicken broth, heavy cream, and chopped sun-dried tomatoes. Stir and bring the mixture to a simmer.
  4. Simmer Meatballs in Sauce: Return the browned meatballs to the skillet with the sauce. Simmer gently for about 10 minutes or until the meatballs are cooked through and the sauce has thickened.

Notes

  • For added color and freshness, incorporate spinach or basil into the sauce during the simmering step.
