Ingredients
Meatballs
- 1 lb ground chicken
- ¼ cup grated Parmesan
- 1 egg
Sauce
- ½ cup heavy cream
- ½ cup chicken broth
- ¼ cup sun-dried tomatoes, chopped
- 1 tsp garlic, minced
Others
- 1 tbsp olive oil
Instructions
- Prepare Meatball Mixture: In a bowl, combine ground chicken, grated Parmesan, and egg, mixing thoroughly until evenly combined. Form the mixture into evenly sized meatballs.
- Brown the Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and brown them on all sides. Once browned, remove the meatballs from the skillet and set aside.
- Make the Sauce: In the same skillet, add the minced garlic and sauté briefly until fragrant. Pour in the chicken broth, heavy cream, and chopped sun-dried tomatoes. Stir and bring the mixture to a simmer.
- Simmer Meatballs in Sauce: Return the browned meatballs to the skillet with the sauce. Simmer gently for about 10 minutes or until the meatballs are cooked through and the sauce has thickened.
Notes
- For added color and freshness, incorporate spinach or basil into the sauce during the simmering step.
