Description

Ingredients

3 medium sweet potatoes

⅓ cup melted unsalted butter

1½ teaspoons ground cinnamon (divided)

½ teaspoon salt

½ teaspoon black pepper

⅓ cup maple syrup + 2 tablespoons (divided)

⅓ cup chopped walnuts

1 teaspoon fresh or dried thyme


Instructions

  1. Preheat oven to 400°F (200°C).

  2. Slice sweet potatoes into ½-inch rounds, peel if desired.

  3. Toss with butter, 1 tsp cinnamon, salt, and pepper.

  4. Arrange on baking sheet and roast 25–30 minutes until tender.

  5. Mix maple syrup, walnuts, remaining cinnamon, and thyme.

  6. Spoon topping over sweet potatoes and bake 8–10 minutes more until caramelized.

  7. Cool slightly and serve; optionally garnish with feta cheese.
