Description

Convenient and filling make-ahead breakfast burritos that combine fluffy scrambled eggs, savory cooked sausage or bacon, sautéed peppers and onions, and melted cheese all wrapped in warm tortillas. Ideal for busy mornings or meal prep, these burritos can be refrigerated or frozen and reheated quickly for a nutritious start to your day.

Ingredients

Egg Mixture

  • 6 eggs
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup bell pepper, chopped
  • ¼ cup onion, chopped

Protein

  • ½ cup cooked sausage or bacon

Other

  • 4 large tortillas
  • ½ cup shredded cheese

Instructions

  1. Cook Protein: If using raw sausage or bacon, cook it thoroughly in a pan over medium heat until browned and fully cooked. Set aside.
  2. Sauté Vegetables: In the same or a clean pan, add the chopped onion and bell pepper. Cook over medium heat until softened and lightly caramelized, about 4-5 minutes.
  3. Scramble Eggs: Whisk together the eggs, salt, and black pepper in a bowl. Pour the egg mixture into the pan with the sautéed vegetables. Stir constantly to scramble the eggs until fully cooked but still moist, about 3-4 minutes.
  4. Prepare Tortillas: Warm each tortilla in a dry skillet or microwave for a few seconds until pliable and easy to roll.
  5. Assemble Burritos: Evenly distribute the scrambled egg mixture, cooked sausage or bacon, and shredded cheese onto each tortilla. Roll the tortillas tightly into burritos, folding in the edges to prevent filling from falling out.
  6. Store Burritos: Wrap each burrito tightly in aluminum foil. Place them in the refrigerator if consuming within a few days or freeze for longer storage up to 2 months.
  7. Reheat Burritos: When ready to eat, reheat the burrito wrapped in foil in an oven preheated to 350°F (175°C) for about 20 minutes if frozen or 10 minutes if refrigerated, or unwrap and microwave on high for 1-2 minutes until warmed through.

Notes

  • Ensure the protein is fully cooked before assembling.
  • For a gluten-free option, use gluten-free tortillas.
  • Vegetarian variation: omit sausage or bacon and add black beans or sautéed mushrooms.
  • Freeze burritos for up to 2 months for best quality.
  • Reheat thoroughly before consuming to enjoy optimal flavor and texture.
