Potato Base

Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
- Cook Potatoes: Place the peeled and cubed potatoes in a large pot, cover them with salted water, and bring to a boil. Cook for 15–18 minutes, or until the potatoes are fork-tender, then drain thoroughly.
- Mash Potatoes: Return the drained potatoes to the pot or a large bowl. Add butter, sour cream, milk, salt, and black pepper. Mash together until smooth and creamy, ensuring no lumps remain.
- Mix in Cheese and Bacon: Stir in 1 1/2 cups of shredded cheddar cheese and half of the crumbled bacon evenly into the mashed potatoes.
- Assemble Casserole: Spread the cheesy potato mixture evenly into the prepared baking dish, smoothing the top for even baking.
- Add Toppings: Sprinkle the remaining 1/2 cup shredded cheddar cheese and the rest of the crumbled bacon evenly over the top of the casserole.
- Bake: Place the casserole in the preheated oven and bake uncovered for 25–30 minutes, or until heated through, bubbly, and the cheese on top is melted and slightly golden.
- Garnish and Serve: Remove from the oven and garnish with the sliced green onions before serving to add a fresh, mild onion flavor and a pop of color.
