Ingredients

Potato Base

  • 4 pounds russet potatoes, peeled and cubed

Dairy & Butter

  • 1/2 cup sour cream
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 2 cups shredded cheddar cheese

Toppings

  • 6 slices cooked bacon, crumbled
  • 3 green onions, sliced


Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Cook Potatoes: Place the peeled and cubed potatoes in a large pot, cover them with salted water, and bring to a boil. Cook for 15–18 minutes, or until the potatoes are fork-tender, then drain thoroughly.
  3. Mash Potatoes: Return the drained potatoes to the pot or a large bowl. Add butter, sour cream, milk, salt, and black pepper. Mash together until smooth and creamy, ensuring no lumps remain.
  4. Mix in Cheese and Bacon: Stir in 1 1/2 cups of shredded cheddar cheese and half of the crumbled bacon evenly into the mashed potatoes.
  5. Assemble Casserole: Spread the cheesy potato mixture evenly into the prepared baking dish, smoothing the top for even baking.
  6. Add Toppings: Sprinkle the remaining 1/2 cup shredded cheddar cheese and the rest of the crumbled bacon evenly over the top of the casserole.
  7. Bake: Place the casserole in the preheated oven and bake uncovered for 25–30 minutes, or until heated through, bubbly, and the cheese on top is melted and slightly golden.
  8. Garnish and Serve: Remove from the oven and garnish with the sliced green onions before serving to add a fresh, mild onion flavor and a pop of color.
