Description

Bright, tangy lime bars featuring a buttery shortbread crust topped with a smooth and zesty lime filling, perfect for a refreshing citrus dessert.

Ingredients

Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, softened

Filling

  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh lime juice
  • Zest of 2 limes

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper or lightly grease it for easy removal of the bars.
  2. Make the Crust: Combine the flour, powdered sugar, and softened butter in a mixing bowl. Mix until the ingredients form a consistent dough. Press this dough evenly into the bottom of the prepared pan to create the crust layer.
  3. Bake the Crust: Bake the crust in the preheated oven for 15 to 18 minutes, or until it is lightly golden around the edges. Remove from the oven but keep the oven on for the filling step.
  4. Prepare the Filling: While the crust is baking, whisk together the eggs, granulated sugar, flour, fresh lime juice, and lime zest until the mixture is smooth and fully combined.
  5. Assemble and Bake: Pour the lime filling over the hot crust layer in the baking pan. Return the pan to the oven and bake for another 20 to 25 minutes, or until the filling is set and slightly firm to the touch.
  6. Cool and Finish: Remove the pan from the oven and allow the lime bars to cool completely at room temperature. Once cooled, dust the top generously with powdered sugar for a sweet finishing touch.
  7. Chill and Slice: For clean, neat edges, chill the lime bars in the refrigerator before slicing into 16 bars. This helps the filling firm up and makes serving easier.

Notes

  • Chilling the lime bars before slicing ensures clean, sharp edges.
  • Use fresh lime juice for the best bright citrus flavor.
  • Make sure the crust is lightly golden before adding the filling for optimal texture.
  • You can store leftover bars in an airtight container in the refrigerator for up to 4 days.
