Description
All the flavors of classic lasagna transformed into a hearty, one-pot soup. This rich and cozy dish combines savory ground meat, tangy tomatoes, tender noodles, and creamy cheeses for a perfect weeknight dinner that’s easy to make and satisfyingly delicious.
Ingredients
Meat and Aromatics
- 1 pound ground beef or Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
Liquids and Tomatoes
- 28 ounces crushed tomatoes
- 6 ounces tomato paste
- 6 cups beef broth
Seasonings and Pasta
- 2 teaspoons Italian seasoning
- 8 ounces lasagna noodles, broken into pieces
- Salt and black pepper to taste
Cheeses for Serving
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Instructions
- Brown the Meat: In a large pot over medium heat, add the ground beef or Italian sausage. Cook until browned, breaking it apart with a spoon. Once cooked, drain any excess fat to keep the soup from being greasy.
- Sauté Vegetables: Add the diced onion and minced garlic to the pot. Cook for about 3-4 minutes until the onion softens and becomes translucent, stirring occasionally to prevent burning.
- Add Tomatoes and Broth: Stir in the crushed tomatoes, tomato paste, beef broth, and Italian seasoning. Mix everything well to combine the flavors.
- Simmer the Soup: Bring the mixture to a gentle simmer. This allows the flavors to meld together and the soup to develop depth.
- Add the Noodles: Once simmering, add the broken lasagna noodles. Continue to cook for about 10-12 minutes, stirring occasionally, until the noodles are tender but not mushy.
- Season to Taste: Add salt and black pepper as desired to enhance the soup’s flavor.
- Serve with Cheeses: Ladle the soup into bowls and top each serving with dollops of ricotta cheese, a sprinkle of shredded mozzarella, and grated Parmesan.
Notes
- For extra nutrition, add fresh spinach or kale when adding the noodles for a boost of greens.
- The soup will thicken as it cools; if it becomes too thick, stir in additional broth or water to reach your preferred consistency.
- Use Italian sausage for a spicier flavor or ground beef for a milder taste.
- Leftovers keep well in the refrigerator for up to 3 days and can be reheated gently on the stove or in the microwave.
