Description

A creamy and cheesy baked chicken casserole inspired by jalapeño poppers, featuring tender shredded chicken, spicy jalapeños, crispy bacon, and melted cheddar cheese for a rich and comforting main course.

Ingredients

Chicken Mixture

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 3 jalapeños, sliced (seeds removed for less heat, optional)
  • 1/2 cup shredded cheddar cheese (half for mixing)

Topping

  • 1/2 cup shredded cheddar cheese (remaining half for topping)
  • 4 slices bacon, cooked and crumbled

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the casserole evenly.
  2. Mix Cream Base: In a large bowl, combine the softened cream cheese, sour cream, garlic powder, salt, and pepper. Mix thoroughly until smooth and creamy.
  3. Add Chicken and Jalapeños: Stir the shredded chicken, sliced jalapeños, and half of the shredded cheddar cheese into the cream cheese mixture until well incorporated.
  4. Assemble Casserole: Transfer the combined mixture into a greased baking dish, spreading it evenly.
  5. Top with Cheese and Bacon: Sprinkle the remaining shredded cheddar cheese over the top, then evenly distribute the crumbled bacon slices.
  6. Bake: Place the casserole in the preheated oven and bake for 20 to 25 minutes, or until the cheese is melted, bubbly, and golden brown.
  7. Rest and Serve: Remove from the oven and let it rest for a few minutes before serving to allow flavors to meld and the casserole to set.

Notes

  • For a milder dish, remove the seeds and membranes from jalapeños before slicing.
  • For added texture, sprinkle breadcrumbs on top before baking.
  • This casserole pairs well with rice, crusty bread, or a fresh side salad.
