Ingredients
Meat and Aromatics
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy), sliced or crumbled
- 1 small onion, diced
- 3 cloves garlic, minced
Herbs and Spices
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Beans and Vegetables
- 2 cans (15 oz each) cannellini or great northern beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups fresh spinach or kale
Liquids
- 4 cups chicken broth
Instructions
- Heat Oil and Brown Sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it apart if crumbled. Remove excess fat if there’s too much.
- Sauté Onion: Add the diced onion to the pot and cook for 3–4 minutes until softened and translucent.
- Add Garlic and Herbs: Stir in minced garlic, dried oregano, dried thyme, and red pepper flakes. Cook for about 30 seconds, until fragrant.
- Add Beans, Tomatoes, and Broth: Pour in the drained cannellini beans, diced tomatoes, and chicken broth. Season with salt and black pepper.
- Simmer the Stew: Bring the mixture to a simmer and cook uncovered for 20–25 minutes to develop flavors and slightly thicken the stew.
- Add Greens: Stir in fresh spinach or kale and cook for about 2 minutes until the greens are wilted and tender.
- Final Seasoning and Serve: Taste the stew and adjust seasoning if necessary. Serve hot, ideally with crusty bread.
Notes
- Serve with crusty bread for a complete meal.
