Ingredients

  • 2 cans (15 oz each) cannellini or great northern beans, drained and rinsed

  • 2 cups fresh spinach or kale

  • 4 cups chicken broth


Instructions

  1. Heat Oil and Brown Sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it apart if crumbled. Remove excess fat if there’s too much.
  2. Sauté Onion: Add the diced onion to the pot and cook for 3–4 minutes until softened and translucent.
  3. Add Garlic and Herbs: Stir in minced garlic, dried oregano, dried thyme, and red pepper flakes. Cook for about 30 seconds, until fragrant.
  4. Add Beans, Tomatoes, and Broth: Pour in the drained cannellini beans, diced tomatoes, and chicken broth. Season with salt and black pepper.
  5. Simmer the Stew: Bring the mixture to a simmer and cook uncovered for 20–25 minutes to develop flavors and slightly thicken the stew.
  6. Add Greens: Stir in fresh spinach or kale and cook for about 2 minutes until the greens are wilted and tender.
  7. Final Seasoning and Serve: Taste the stew and adjust seasoning if necessary. Serve hot, ideally with crusty bread.
