Ingredients
Dry Rub:
1 ½ teaspoons thyme
1 teaspoon smoked paprika
½ teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon black pepper
Irish Chicken:
8 chicken thighs (or preferred cuts)
½ head cabbage, roughly chopped
4 potatoes, peeled and sliced into ¼-inch rounds
1 medium onion, sliced
½ cup chicken stock
Salt and pepper to taste
Instructions

Preheat oven to 375°F (190°C).

Combine dry rub ingredients and coat chicken evenly.

Sear chicken in a hot pan with oil until browned; remove.

Sauté cabbage in the same pan for 2-3 minutes.
