Description

Ingredients

Dry Rub:

1 ½ teaspoons thyme

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon onion powder

½ teaspoon garlic powder

¼ teaspoon black pepper

Irish Chicken:

8 chicken thighs (or preferred cuts)

½ head cabbage, roughly chopped

4 potatoes, peeled and sliced into ¼-inch rounds

1 medium onion, sliced

½ cup chicken stock

Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Combine dry rub ingredients and coat chicken evenly.

  3. Sear chicken in a hot pan with oil until browned; remove.

  4. Sauté cabbage in the same pan for 2-3 minutes.

  5. Add potatoes, onions, and chicken stock; stir and season.

  6. Place chicken on top and bake 45-50 minutes until cooked through.
