Ingredients
Beef Short Ribs

Sautéing

- ¼ cup balsamic vinegar or red wine
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp rosemary
- 1 tsp thyme
Instructions
- Season the Ribs: Generously season the beef short ribs with salt and pepper to add essential flavor before cooking.
- Sear the Ribs: Turn the Instant Pot to Sauté mode, add olive oil, and sear the short ribs on all sides until they develop a rich brown crust. Remove and set aside to build flavor in the dish.
- Sauté Aromatics: In the same pot, add sliced onions and minced garlic; sauté for 2 to 3 minutes until softened and fragrant, releasing their flavor into the base.
- Add Liquids and Seasonings: Stir in beef broth, balsamic vinegar or red wine, tomato paste, and Worcestershire sauce to create a deep, savory sauce.
- Combine and Season: Return the seared ribs to the pot, sprinkle rosemary and thyme over them to infuse the dish with herbal notes.
- Pressure Cook: Seal the Instant Pot lid and cook on High Pressure for 45 minutes to tenderize the ribs thoroughly and meld flavors.
- Release Pressure: Allow the pressure to release naturally for 10 to 15 minutes, then perform a quick release of any remaining pressure to safely open the pot.
