Ingredients
Honey Soy Chicken
- 8 chicken drumsticks
- 1/3 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon sesame oil
Coconut Rice
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1/2 teaspoon salt
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for baking the chicken drumsticks.
- Make Sauce: In a bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and sesame oil until well combined.
- Marinate Chicken: Toss the chicken drumsticks in the honey soy sauce mixture until evenly coated. For best flavor, marinate for up to 24 hours in the refrigerator (optional).
- Arrange & Bake: Place the coated drumsticks on a lined baking tray. Bake in the preheated oven for 40-45 minutes, turning once halfway through, until the chicken is sticky, caramelized, and cooked through.
- Prepare Coconut Rice: Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice, coconut milk, water, and salt. Bring to a boil over medium heat.
- Simmer Rice: Once boiling, reduce the heat to low, cover, and simmer the rice for 12-15 minutes until the liquid is absorbed and the rice is tender.
- Rest & Fluff Rice: Remove the pot from heat and let the rice rest, covered, for 5 minutes. Then fluff with a fork before serving.
- Serve: Plate the coconut rice and top with the baked honey soy chicken drumsticks. Drizzle any extra pan sauce over the chicken for added flavor. Garnish with chopped spring onions if desired.
