Description

This Honey Pepper Chicken Mac and Cheese combines creamy cheese sauce, honey-glazed chicken, and a touch of heat for a bold and comforting dinner that’s easy to make and impossible to resist.


Ingredients

2 cups elbow macaroni

1 tablespoon olive oil

1 pound boneless skinless chicken breasts, cut into bite-sized pieces

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon honey

1/2 teaspoon crushed red pepper flakes

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk

1 cup heavy cream

1 1/2 cups shredded mozzarella cheese

1 cup sharp cheddar cheese

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Chopped parsley (optional)


Instructions

  1. Cook macaroni according to package directions. Drain and set aside.

  2. Heat olive oil in a skillet. Season chicken with salt and pepper, then cook 6–8 minutes until done.

  3. Add honey and red pepper flakes to chicken, stir to coat. Remove from heat.

  4. In a saucepan, melt butter and whisk in flour. Cook 1–2 minutes until golden.

  5. Slowly whisk in milk and cream. Stir in garlic powder and onion powder.

  6. Add mozzarella and cheddar cheese, stir until smooth.

  7. Mix cooked pasta into cheese sauce. Fold in chicken.

  8. Transfer to baking dish, top with extra cheese, and broil 2–3 minutes.

  9. Garnish with parsley and serve hot.

Notes

  • Adjust honey or pepper flakes for more/less spice
  • Add extra cheese on top for a golden finish
  • Best served fresh, but reheats well with added milk
