Description
A rich and hearty home-style lamb casserole slow-baked with tender lamb shoulder, root vegetables, and fragrant herbs in a savory gravy, perfect for a comforting dinner.
Ingredients
Lamb and Coating
- 2 pounds lamb shoulder, cubed
- 2 tablespoons flour
- Salt and pepper to taste
Vegetables
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, cubed
Liquids and Seasonings
- 2 tablespoons olive oil
- 1 cup beef broth
- 1 teaspoon rosemary
- 1 teaspoon thyme
Instructions
- Preheat Oven: Preheat your oven to 325°F (160°C) to prepare for slow baking the casserole.
- Prepare Lamb: In a bowl, toss the cubed lamb shoulder pieces with flour, salt, and pepper to coat evenly, which helps to thicken the sauce later.
- Brown Lamb: Heat olive oil in a skillet over medium-high heat and brown the lamb pieces on all sides to seal in flavor. Remove the browned lamb and set aside.
- Sauté Vegetables: In the same skillet, sauté the chopped onion, sliced carrots, and cubed potatoes briefly to soften and build flavor.
- Assemble Casserole: Transfer the browned lamb and sautéed vegetables into a casserole dish. Add the beef broth along with rosemary and thyme for seasoning.
- Bake: Cover the casserole dish and bake in the preheated oven for 2 hours, or until the lamb is tender and the flavors have melded beautifully.
Notes
- For added flavor and texture, try adding parsnips or celery to the vegetable mix.
- This casserole is delicious served alongside creamy mashed potatoes or with crusty bread for soaking up the savory gravy.
