- Bring Roast to Room Temperature: Remove beef roast from the refrigerator 30 minutes before cooking to allow it to reach room temperature, ensuring more even cooking.
- Preheat Oven: Preheat your oven to 425°F (220°C) to start the roasting process at a high temperature for creating a flavorful crust.
- Prepare the Roast: Pat the roast dry thoroughly with paper towels to help the herb mixture adhere and promote better browning.
- Make Herb Mixture: In a small bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, salt, black pepper, paprika, and Dijon mustard if using. Mix well to form a paste.
