Description

Hearty White Lasagna Soup is a comforting, rich, and creamy Italian-inspired soup that captures the flavors of traditional lasagna. This soup features tender lasagna noodles, Italian sausage, spinach, ricotta, mozzarella, and Parmesan cheeses, all simmered in a flavorful garlic and herb broth. Perfect for cozy dinners, it combines the best elements of lasagna into an easy-to-make, satisfying soup.

Ingredients

Soup Base

  • 1 pound Italian sausage, casings removed
  • 1 small onion, finely chopped (about 1 cup)
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste

Pasta and Vegetables

  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 2 cups fresh baby spinach

Cheeses

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the Sausage: In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through, breaking it into small pieces as it cooks. This provides a rich, flavorful base for the soup.
  2. Add Onion and Garlic: Add the chopped onion to the pot and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds to release its aroma.
  3. Pour in Broth and Season: Pour in the chicken broth, then add Italian seasoning and crushed red pepper flakes if using. Stir well and bring the mixture to a boil.
  4. Cook the Pasta: Add the broken lasagna noodles to the boiling broth and cook until the noodles are tender but still slightly firm, about 7-9 minutes. Stir occasionally to prevent sticking.
  5. Add Spinach: Stir in the fresh spinach leaves and cook until they wilt, about 1-2 minutes.
  6. Add Ricotta and Mozzarella: Lower the heat to gentle simmer and stir in the ricotta and shredded mozzarella cheese until well combined and creamy. Season the soup with salt and pepper to taste.
  7. Serve: Ladle the soup into bowls and garnish with grated Parmesan cheese. Serve hot for a comforting meal packed with lasagna flavors in a soupy form.

Notes

  • Use mild or spicy Italian sausage depending on your heat preference.
  • For a vegetarian version, substitute sausage with mushrooms or plant-based sausage.
  • Fresh spinach can be replaced with kale or Swiss chard for variation.
  • To save time, you can use pre-cooked lasagna noodles but adjust cook time accordingly.
  • Leftovers keep well in the fridge for up to 3 days and reheat nicely adding a splash of broth if needed.
