Ingredients
Vegetables
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
Liquids & Canned Goods
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
Other
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt & pepper to taste
Instructions
- Heat oil: Heat 1 tablespoon of olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté base vegetables: Add the diced onion, sliced carrots, and chopped celery to the pot. Cook for 5 to 6 minutes until the vegetables soften and become fragrant.
- Add aromatics and other veggies: Stir in the minced garlic, diced zucchini, canned diced tomatoes with their juices, vegetable broth, and Italian seasoning to the pot.
- Simmer the soup: Bring the soup to a boil, then reduce the heat to a simmer. Let it cook gently for 20 to 25 minutes, or until all the vegetables are tender and flavors meld together.
- Season to taste and serve: Season with salt and pepper as desired. Serve hot, and enjoy your nourishing vegetable soup.
