Ingredients

Vegetables

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced

Liquids & Canned Goods

  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth

Other

  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt & pepper to taste


Instructions

  1. Heat oil: Heat 1 tablespoon of olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté base vegetables: Add the diced onion, sliced carrots, and chopped celery to the pot. Cook for 5 to 6 minutes until the vegetables soften and become fragrant.
  3. Add aromatics and other veggies: Stir in the minced garlic, diced zucchini, canned diced tomatoes with their juices, vegetable broth, and Italian seasoning to the pot.
  4. Simmer the soup: Bring the soup to a boil, then reduce the heat to a simmer. Let it cook gently for 20 to 25 minutes, or until all the vegetables are tender and flavors meld together.
  5. Season to taste and serve: Season with salt and pepper as desired. Serve hot, and enjoy your nourishing vegetable soup.
