Instructions

  1. Heat the oil: In a large pot over medium heat, warm 1 tablespoon of olive oil until hot but not smoking.
  2. Brown the beef: Add 1 lb of beef stew meat to the pot and cook until browned on all sides, which enhances flavor and texture.
  3. Sauté the aromatics and vegetables: Stir in chopped onion, minced garlic, sliced carrots, and celery, cooking for 3–4 minutes until the onions become translucent and the mixture is fragrant.
  4. Add remaining ingredients: Mix in diced potatoes, canned diced tomatoes with their juice, 6 cups of beef broth, dried thyme, salt, black pepper, and the bay leaf to the pot.
  5. Bring to boil and simmer: Increase the heat to bring the soup to a rolling boil, then reduce the heat to low to maintain a gentle simmer.
  6. Cook until tender: Cover the pot and let the soup simmer for 40–50 minutes, or until the beef is tender and the vegetables are fully cooked through.
