Description

These crispy baked ground turkey tacos are loaded with a savory turkey and black bean filling, melty Monterey Jack cheese, and topped with a creamy avocado sauce. Perfect for a quick, flavorful dinner


Ingredients

For the Avocado Sauce:

1/2 medium avocado

1/4 cup sour cream

1 tbsp fresh lemon or lime juice

1/4 cup cilantro leaves (packed)

1/2 tsp kosher salt (plus more to taste)

2 tbsp water (plus more as needed)

For the Taco Filling:

2 tsp avocado oil or olive oil

8 oz lean ground turkey

2 1/2 tsp homemade taco seasoning

1/3 cup chopped onion

3/4 cup canned black beans (drained)

4 oz green chiles

2 tbsp chopped cilantro

Taco Seasoning:

1/2 tsp cumin

1/2 tsp oregano

1/2 tsp garlic powder

1/2 tsp kosher salt

1/4 tsp smoked paprika

1/4 tsp chili powder

1/8 tsp cayenne pepper (optional)

For the Tacos:

6 fajita-sized flour tortillas

1 1/2 cups shredded Monterey Jack cheese

Cooking spray or avocado oil


Instructions

  1. Blend all avocado sauce ingredients in a food processor until smooth. Set aside in fridge.

  2. Heat oil in a skillet over medium. Add turkey, half the seasoning, and onion. Cook 4–5 minutes until browned.

  3. Add beans, green chiles, remaining seasoning, cilantro, and water. Simmer 15 minutes.

  4. Preheat oven to 425°F. Line a baking sheet with tortillas. Top with cheese and filling.

  5. Bake 1–2 minutes until cheese melts. Fold tortillas in half, brush with oil.

  6. Bake 10–12 minutes more until golden and crispy. Serve with avocado sauce.

Notes

  • You can substitute the turkey with ground chicken or beef.
  • Make the avocado sauce a day ahead to save time.
