Description

A quick and comforting take on classic beef stroganoff using ground beef, mushrooms, and a creamy sour cream sauce. This hearty dish is perfect for busy weeknights, combining tender ground beef and sautéed mushrooms with a tangy, rich sauce served over egg noodles.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup sour cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and black pepper, to taste
  • 8 oz egg noodles or pasta

Instructions

  1. Brown the beef: In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart with a spoon. Drain any excess fat from the pan to keep the stroganoff rich but not greasy.
  2. Sauté vegetables: Add butter, chopped onions, and sliced mushrooms to the skillet. Cook until the onions are translucent and mushrooms are tender, about 5-7 minutes, stirring occasionally to prevent sticking.
  3. Add garlic and flour: Stir in the minced garlic and sprinkle the flour over the mixture. Cook for about 1-2 minutes to cook out the raw flour taste and help thicken the sauce.
  4. Deglaze and simmer: Slowly pour in the beef broth while stirring continuously to prevent lumps. Add Worcestershire sauce. Bring the mixture to a simmer and cook until the sauce thickens, about 5-8 minutes, stirring frequently.
  5. Finish with sour cream: Remove the skillet from heat. Stir in the sour cream gently, ensuring the sauce is creamy and smooth. Do not boil after adding sour cream as it may curdle.
  6. Prepare noodles: Meanwhile, cook the egg noodles according to package instructions until al dente. Drain well.
  7. Serve: Spoon the stroganoff sauce generously over the cooked noodles. Garnish with fresh parsley if desired and serve immediately for a comforting meal.

Notes

  • Greek yogurt can be used as a substitute for sour cream to add a tangy flavor with less fat.
  • Avoid boiling the sauce after adding sour cream to prevent curdling and maintain a creamy texture.
  • For extra flavor, consider adding a splash of white wine when deglazing the pan.
  • Use fresh mushrooms like cremini or button mushrooms for best results.
  • This recipe can be doubled easily for larger gatherings.
